The Art of the Spanish Gin Tonica - A Local Twist on a European Classic. When most people think of gin and tonic, they picture a simple highball: gin, tonic water, maybe a wedge of lime. But in Spain, this humble cocktail has evolved into something extraordinary-a drink that is equal parts mixology, aromatherapy, and visual delight. Say hello to the Gin Tónica, a Spanish-style gin and tonic that's as much about presentation and sensory experience as it is about flavor.

A Brief History
The Gin Tónica rose to prominence in Spain in the early 2000s, transforming from a classic British refreshment into a high-end, ritualized experience found in Michelin-starred restaurants, chic bars, and cozy corner cafés across the country. Spaniards embraced this cocktail with flair: balloon glasses, top-shelf gins, premium tonic waters, and an abundance of fresh botanicals became standard. The result? A drink that’s crisp, complex, and deeply refreshing—perfect for slow sipping.
What Makes It Different?
Unlike the standard G&T, the Gin Tónica is built with intention:
- Served in a copa de balón (balloon glass) to enhance aromas and allow room for plenty of ice and garnishes.
- Premium tonic is added carefully to preserve carbonation.
- Fresh botanicals and garnishes like rosemary, citrus peel, star anise, or juniper berries elevate both aroma and flavor.
- It's a drink meant to be savored — not slammed.
Our Local Twist: Minnesota Meets Madrid
At Surdyk’s, we’re all about celebrating great flavors—especially when we can highlight amazing local producers. For our take on the Gin Tónica, we’re using:
🌾 Far North Solveig Gin – Distilled in Hallock, MN, Solveig is a delicate, grain-to-glass gin with notes of citrus, thyme, and lavender. It’s elegant, aromatic, and the perfect base for a refined G&T.
🌿 Fresh fruit and herbs from the Northeast Minneapolis Farmers Market – Using farm fresh berries and fruit is one of the easiest ways to elevate this cocktail! And go wild with the herbs - think rosemary, mint, thyme, or even basil. The key is to play with what’s in season to create something fresh and uniquely yours.
Surdyk’s Spanish-Style Gin Tónica Recipe
Ingredients:
- 2 oz Far North Solveig Gin

- Garnishes: strawberries, blackberries, sprigs of fresh herbs, a slice of lemon or grapefruit peel, juniper berries, edible flowers — whatever looks (and smells) amazing!
To Make:
-
Fill a large balloon glass with ice. Swirl to chill the glass, then drain any excess water.
-
Add the gin and gently pour in the tonic down the back of a spoon to preserve carbonation.

Garnish with fresh fruit and your choice of herbs and aromatics — get creative and don't overthink it.
