Bara-Cara Tequila Blanco

Bara-Cara Tequila Blanco is crafted by Melly Barajas Cardenas, one of the few female distillers in Mexico, and is made the same way tequila was produced 50 or 60 years ago, with only three ingredients: blue weber agave, yeast, and water. The distillery abstains from modern production techniques like using a diffuser for extraction, autoclave for cooking, or the use of additives to alter the taste. Every step of production takes place under one roof by a small staff of local women from the surrounding area. The tequila starts with an 8 to 10-year-old mature agave grown in the rich, red soils of the highlands of Jalisco. The plants are then hand-harvested and roasted at low temperatures in traditional stone ovens for 24 hours and then allowed to rest for another 24 hours before milling. The liquid is then fermented over ten to twelve days in open air, steel vats and is then double distilled in stainless steel pot stills to create a tequila that is rested, oxygenated and proofed before being bottled at 42% abv. This process yields many of Bara Cara’s distinct flavors and aromas. The tequila opens with cooked agave, lemon/lime citrus notes, fresh herbs, and salty mineral aromas. The palate is balanced, beautifully clean with complex flavors of vanilla bean, lime, mineral, coffee bean, and cooked agave. The finish has black pepper, clove, and cinnamon spice notes. It is an honest expression of Melly’s time-honed tequila-making techniques – slowly fermented, unadorned by oak, and free of additives.
