Interview with Sidebar Executive Chef Sam Gilman

 

 

Where were you born and raised?

  • Eagan, MN

 

 

Who are your inspirations when it comes to cooking?

  • Definitely my parents. The team and also peers. There is a very long list of chefs but to name some, Paul Berglund, Bjorn Frantzen, Christopher Kostow, Michael Anthony

 

Can you share your path to becoming a chef?

  • I attended the Culinary Institute of America in Hyde Park, NY right out of high school. I completed an internship at a restaurant in Washington, D.C. I moved back to Minnesota and just started working my way up through kitchens. I worked at Meritage, The Bachelor Farmer, Bellecour before moving out to Portland, Oregon. Came back to Minnesota and was the CDC at Sooki and Mimi before starting at Sidebar.

 

 

What are you most excited about for Sidebar’s menu?

  • I think I am most excited about just getting to keep creating new dishes that are seasonal and fun. Seeing what the guests are excited about and developing the menu.

 

Are you willing to play My Last Supper? If so, what would it be?

  • Toss up between two meals. Either a really nicely roasted chicken or a big plate of pepperoni, string cheese and jalapeño cheddar chips.
