With the implementation of organic and biodynamic practices as well as a return to old-world, minimalist techniques of winemaking, the winery has found itself now named among the greatest white wine producers in the world. It leans on the drier side, still has plenty of classic stone fruit flavors to keep it from making your teeth ache and possesses an energetic mouthfeel that makes me happy every time I take a sip. I find myself reaching for this wine whenever cheese is the prominent part of a meal (Charcuterie boards, Raclette, Fondue) or when there is some heat in a dish from Thai or Hmong peppers. But don’t wait for a special meal. This wine is a delight all by itself.
