Dominic Lagadec is a native of Brittany. He moved to the Basque Country when he was a kid. Passionate about cider and the old tradition of the basque cider, he decided to start his cidrerie to produce Sagarnoa in 1999. The Sagarnoa is an ancestral tradition from the Basque country that disappeared several decades ago. Txopinodo’s specialty is precision production techniques involving aging on the lees. His “nut press” makes the method unique here, used to achieve gentle pressing that does not break the apple seeds.
