We hesitate to even tell you that this is a Prosecco; it's so unlike any prosecco you've had, you'd never recognize it as one. Bone dry with laser-focused acidity and a fine bubble make this closer to Champagne, but without the biscuit and brioche. All of the fruit comes from the single commune of Santo Stefano in the steep Valdobbiadene hills. It's bright, fresh, and clear with delicate balance.
