The grapes are handpicked, selecting only those that are perfectly ripe. The Merlot and Syrah varietals are harvested between the 10th and 15th of September. Followed by Petit Verdot and Cabernet Sauvignon in early October. Each varietal is vinified separately in stainless steel tanks at controlled temperatures for 30 days.
