Tips and tricks from a professional (and Sidebar Bar Manager) on making your home bar exceptional.

The Pro: Victoria Herrera, Bar Manager at Sidebar at Surdyk's

I was born and raised in Hermosillo, Sonora, Mexico. Moved to Minnesota almost 25 years ago (time flies when you are having fun!). I started bartending back in 2009, at Ruby Tuesday’s. I have been bartending all over, from dive bars to elevated cocktail bars. (Don’t ask me to pick a favorite because I like both!)

What are 3 basic cocktails everyone should know how to make?

Old Fashioned, Manhattan, Margarita

What’s your go-to drink at home?

I am usually a wine drinker at home, but when I want a cocktail, I’ll make myself a Negroni.
I always have a bottle of amaro at home for after dinner or whenever I do not want a full cocktail. Lately I have been drinking Trail Magic Margarita THC Seltzers; I will make a glass with a tajin rim, some ice, a little extra lime juice, pour and enjoy! (I like mine a little more tart.)

Negroni Ingredients:

What are the absolute non-negotiable items every home bar should have?

Shakers, jigger, a strainer, and a good bar spoon. Of course, do not forget good quality spirits and bitters.

What are some things you can do to elevate a homemade cocktail?

I think fresh juice is a good start. When making a margarita you can totally taste the different from fresh lime juice to your store bought. Some fancy clear ice would also elevate your cocktail; it helps maintain the drink cold without diluting it.

When should you splurge on spirits? And when is it ok to buy less-expensive options?

Splurge when it actually makes a difference in the drink! If you are drinking it neat, or in an Old Fashioned, go for quality. Also, cheap vermouth can ruin a drink, so get something decent and store it in the fridge (if you have a wine stopper and vacuum pump, even better!) I’d recommend writing the date you opened it on the label. When buying tequila do keep an eye out. I would suggest something that is 100% blue agave without additives! AND it is totally okay to buy less expensive spirits, especially if you are mixing it with soda or something that will overtake the flavor.

What are some luxury bar items (whether a special bottle or equipment) that would be a major upgrade to home bartending?

  • Again, good ice (or try large clear ice molds) it is a game changer for presentation and dilution control.

  • A good mixing glass.

  • A well-made bar knife and peeler.

  • Specialty Spirits & Liqueurs:
A great amaro, a high end vermouth, and a unique liqueur can elevate simple drinks.
