Description
Fruit was harvested in mid-October and captured the warmth of the season and the small berry formation bringing concentrated raspberry and currant fruits, sage, kalamata olive, and dark violet aromas. Around 80% of this fermentation was fermented as whole-bunch (not destemmed) this portion of carbonic helped to accentuate the wild berry and crunchy red fruit flavors.
