With the recent season release of their Estate Cider, co-founder Adam Theis had this to say about all that goes into creating these expressive ciders:
“We planted trees before we ever sold a bottle of cider — because if we wanted true cider apples, we had to grow them ourselves. There’s no big supply chain for bittersweet apples, so over the years we tracked down growers one by one and planted thousands of trees, not even knowing if they’d survive Minnesota winters. Some didn’t. Entire blocks have frozen out at -27°F. Others survived but never fruited. And some — the special ones — proved they belonged here. For 14 years we’ve tested antique European and American varieties to see what thrives in our soil and climate. The result is an orchard full of character — bittersweet and bittersharp apples for tannin, heirloom varieties for acid and aroma — all growing in central Minnesota. This orchard is the story of our cider. It’s true terroir: specific varieties, our land, that year’s weather, even native orchard yeast — all captured in the bottle. Taste the Land of Milk & Honey.
