Riesling?! Really?! I know. Hear me out. (Read me out?) I first discovered the magic of this grape while working at the two-star Michelin restaurant Aquavit in New York City. So imagine my surprise when I started consulting here and the looks I would get when I would recommend Riesling to customers looking for a white wine to go with food. Shock. Horror. Confusion. With my staff pick I wanted to find something that would be affordable, refreshing, but dispel the myth that Riesling is always sweet or always expensive. Luckily for me (and for you), Selbach makes just the right wine. Their Incline Riesling, named for the impossibly steep (more than 60°!) slopes of the Mosel river valley where the grapes are grown, was created to compete with similar Rieslings but at a more competitive price point, and boy did they knock it out of the park. The nose is floral and slightly honeyed, with a palate of bracing lime zest and green apple acidity that leaves your mouth watering and ready for the next bite of food. If you're a lover of NZ Sauv Blanc, this is a perfect wine to add into your rotation. As the weather cools off, I can't think of a better wine to go with some beautifully tender braised pork or a roast duck. -Adam Lowe, Consultant
