Pronounced "shah-bray", this blend of indigenous varieties found in the region of Ribeira Sacra: Mencia, plus small percentages of Souson, Mouraton and Garnacha. The hillside vineyards here are steep and rocky, riddled with granite and slate, and climate is moderated by the effects of the Minho and Sil rivers. Flavors of perfectly ripe raspberries, underripe blackberries, bramble and dried herbs.
