Domaine Daniel-Etienne Defaix is one of the icons of Chablis; the family is in its 14th generation! Firmly in the "unoaked" tradition of Chablis, an emphasis on using the spent lees kept in suspension as anti-oxidative elements ensure minimal to no additions to the wines. Their bottling from Cote de Lechet rests on the lees in stainless steel for 18 months with regular batonnage.
