A truly unique blend: 42% Cabernet-Sauvignon, 30% Syrah, 28% Counoise. Cabernet is not widely used in Provence, especially rose, but this delivers freshness, acidity, and red berry flavor. Counoise has fallen into obscurity, more recently revived as a blending grape in Châteauneuf-du-Pape. Here it gives a little depth of color and introduces spice notes. Don't miss this spring pairing with a rack of lamb.
