Spring Wine Sale Staff Selection: I drink sparkling wine year round for one simple reason: I love to cook. And eat. To date, I have yet to find another style of wine that pairs with almost any meal as successfully as a bottle of sparkling will. Bright fruit and palate-cleansing bubbles can take on everything from vegetables to fish, chicken to chops just as easily as it handles creamy pasta. Sparkling wine also complements an impressive range of cooking styles. Raw sushi? Amazing. Smoky grilled pork chops? Heaven. Fried chicken? So good! The 2015 Calvet Brut Rosé comes from one of the oldest negociant houses in Bordeaux as well as from an excellent vintage. Mostly Cabernet Franc with a small bit of Merlot, the combination offers notes of wild strawberry, ripe raspberry and a taut mineral quality that is way more dramatic than I was expecting. The fruit is rich, the acidity is mouthwatering and the finish is long. The sale price makes this an affordable weeknight meal partner but the quality and taste may have you holding a bottle or two for a special celebration. – Noelle Starr
