ONE BOTTLE: MANY WAYS
The first in a monthly series.
Surdyk's staff is here to show you how to use a specialty spirit or liqueur in several ways so you can feel confident about the purchase AND avoid lingering bottles in the back of the bar cabinet.
THE BOTTLE: Heirloom Brand Pineapple Amaro Liqueur
Who is Heirloom Brand?
Heirloom Brand Liqueurs is an artisanal liqueur brand created by local cocktail legends Nick Kosevich and Ira Koplowitz (the founders of Bittercube Bitters), along with partner Brandon Reyes. They emphasize whole botanical liqueurs, focusing on quality ingredients and a historical ethos.
What it is:
Heirloom's Pineapple Amaro is a gently tropical yet bitter liqueur made with Queen Victoria pineapple—a smaller, more vibrantly colored, and aromatic variety than what you typically find in grocery stores. The bitterness comes from quassia bark, perfectly balancing the fruit's sweetness. Don’t think of this only as a Tiki ingredient—this versatile liqueur offers something for everyone.
JUNGLE BIRD COCKTAIL
Swapping out the typical Campari for Pineapple Amaro keeps the bitterness while bringing tropical flavors to the forefront.
Ingredients:
Instructions:
Add all ingredients to a cocktail shaker with ice and shake vigorously until chilled. Strain into a cocktail glass over fresh ice. Garnish with a pineapple slice and frond.
PAPER PLANE COCKTAIL
It doesn’t get easier than an equal-part cocktail. Here, Pineapple Amaro subs in for traditional Amaro Nonino, offering a juicy, tropical note.
Ingredients:
Instructions:
Add all ingredients to a cocktail shaker with ice and stir until chilled. Strain into a cocktail coupe and garnish with a lemon twist.
SPRINGTIME BLACK MANHATTAN
Usually reserved for the colder months, swapping Pineapple Amaro for the huskier Averna makes this cocktail brighter, lighter, and seasonally appropriate for spring.
Ingredients:
Instructions:
Stir well with ice, strain into a chilled cocktail glass, and garnish with a cocktail cherry.
AFTER-DINNER DIGESTIF
Amari is classically served at the end of a meal. This can even take the place of dessert—or, as you will see next, enhance it.
ELEVATED PINEAPPLE UPSIDE-DOWN CAKE
Make your favorite Pineapple Upside-Down Cake recipe and allow this 21+ glaze to soak into the cake before serving.
Boozy Pineapple Glaze
In a small bowl, whisk together:
Once the cake has cooled for about 15 minutes, use a wooden skewer to poke holes in the cake. Pour a little more than half of the glaze over the cake, allowing it to sink into the holes. Let sit for 10 minutes before transferring to a serving plate. Brush the remaining glaze on top and serve.
