GRAPEREPUBLIC is a winery located in the Yamagata Prefecture and focuses on wines made from grapes grown only around their home of Nanyo City. Varieties grown in Japan are mostly vitis labrusca, mostly used as table or bulk grapes in the United States, but they thrive in Japan's fertile soils. Varieties include Delaware, Steuben, and Niagara. GRAPEREPUBLIC is very much a "natural" winemaker, with minimal manipulation in the vineyard and winery. The Aromatico sparkling pet-nat is made from mostly Delaware grapes with some Steuben. Bottled before fermentation is complete to capture the natural carbonation, the wine is unfined and unfiltered. Notes of mango and banana along with a savory quality overall.
