We love our salty, buttery, spicy, sweet, fatty, rich, delicious (we could go on…) Specialty Meats.

Many are hand cut by the pound, fresh to order, using a hand-crank Berkel machine, giving you the perfect slice.

Some of our favorite producers include:

La Quercia – Norwalk, IA:

Prosciutto, Pancetta, ‘Nduja, Coppa, Guanciale Lardo, and Borsellino Salami. All humanely raised, growth hormone/antibiotic free, and free range, and some items are organic. We hand cut most La Quercia products, and Borsellino Salami, Pancetta, and Prosciutto are also available pre-packed and ready to go.

Benton’s Smoky Mountain Country Hams – Madisonville, TN:

Bacon and Smoked Jowls. Dry-cured by hand over a period of at least 9 months, Benton’s products have reached a certain cult status in kitchens across America (yes – this is the bacon that makes the famous Momofuku ramen broth so smoky). We freshly slice Benton’s slab bacon and jowls to order.

Fra Mani Salumi – Berkeley, CA:

Salami Toscano. An all-time favorite of staff and customers alike, Fra Mani was founded by chef Paul Bertolli in 2006. Made with antibiotic-free, pasture-raised pork, the Toscano is subtly smoky with a mild hint of garlic.

D’Artagnan – New York, NY:

Medallion of Foie Gras & Truffle, Smoked Duck Breast, Saucisson Sec. A company at the very forefront of the specialty food movement, D’Artagnan products have long been a staple at Surdyk’s. We slice their classic French-style Saucisson Sec to order, and sell the decadent Medallion Foie Gras & Truffle and Smoked Duck Breast pre-packaged.

Salumeria Biellese – New York, NY

Hot Sopressata. Simply the greatest spicy salami we’ve ever tasted. Sliced to order – a must for any charcuterie board.

Gerhard’s Brats – Minneapolis, MN

Smoked Bratwurst, Fresh Bratwurst, Käsewurst (Cheese Bratwurst). Made by hand from locally sourced, all-natural, and ethically raised pork, in small batches with no chemicals, no fillers, and no added nitrates – nothing but pork, salt, pepper, and garlic. Available in 4-packs.

Olympic Provisions – Portland, Oregon

Assorted Dry-Cured Salamis. These little guys may be small (4.5 oz each) – but they pack a lot of punch. Surdyk’s carries up to 12 different varieties (like Chorizo Rioja, Saucisson d’Alsace, and the fabulously exotic Loukanika) at any given time, and we’ve yet to find one that didn’t knock our socks off. Pre-packaged and perfect for picnics.

Mousse and Pâté:

We offer a variety of meat pâtés including Truffle and Duck-Port Wine Mousse, and our own house-made Coarse Country Pâté, Country Pâté with Prunes and Armagnac, Pork Liver Terrine, Duck Confit, Duck Rillettes, Chicken Liver Mousse, and Terrine of Foie Gras.
We often carry local Foie Gras, though availability does vary by season. Please call to inquire about availability or to pre-order.
We prepare and package our own duck fat and lard.
