This singular American Single Malt uses a process invented by the team at Brother Justus, a method they call the "Aitkin Country Process," to capture the flavors of the ancient peat bogs found in Minnesota's boreal forest. Rather than burning the peat, this hand-brewed and hand-distilled single malt is "Cold-Peated" creating an intense earthy and herbaceous whiskey, capturing the flavor of natural peat.
