A mixed mash bill single pot still distillate that includes malted barley, unmalted barley, oats, and rye, all grown locally in Ireland, is initially matured in Oloroso sherry hogsheads from Spain. It's then finished in Pedro Ximenez casks from Malaga, a portion of which are made from chestnut, an unusual wood for whiskey aging.
