Summer begins officially on June 21 and we’re loving the sun and the heat… particularly because of the short spring & long winter! We’ve exchanged our heart cheddars and melty alpines for younger, softer cheeses. While these cheeses have great flavor, the can be overwhelmed by heavier wine making them natural pairings with summer favorite wines like rosé and Sauvignon Blanc.
Here are some of our warm weather favorites:
Shepherd’s Hope: Coming from Nerstrand, Minnesota this is our favorite take on Queso Fresco. Shepherd’s Hope has the springy, creamy mouthfeel of something like a ricotta, but with a slightly grassier and lactic taste and just a touch of citrus. Tru this local favorite as a mozzarella replacement in a Caprese salad.
Donnay Dairy Chevre: Fresh chevre is one of the most versatile cheese as it can be melted, mixed, or just plain snacked on. Once summer comes around, we like it most in the last iteration. Tangy, crisp, and clean, it hits all of our favorite goat milk flavors while still being creamy and mild. Mix this cheese into a summer pasta or serve as a dessert with fresh berries, honey, and just a drizzle of balsamic.
Burrata: This is a perennial summer favorite. Imagine freshly pulled mozzarella that has been stuffed with rich cream – that’s burrata. We only have this cheese May – October so while we have it, we use it for everything. One of our favorite, classic ways to enjoy it is with a crusty baguette and fresh pesto. (If you don’t want to make your own, we have a delicious house-made pesto you can pick up as well.)
