Over in aisle 7, tucked in an amongst Greek and South American wines lives one of my favorite white wines in our store. Evolucio Furmint is a dry, mineral-driven white from Tokaji, Hungary that flies under almost everyone’s wine radar. Mention Hungarian wine and most often people think of their famous (& expensive!) dessert wines, but thankfully they also produce delightful dry whites from the Furmint grape in these parts. Tokaji, located in the northeast of Hungary, is one of the world’s oldest designated wine regions with boundaries set in the mid-1700s. The volcanic nature of the soil found here and the extreme continental climate develops perfumed wines with a stony, bright personality. Evolucio Furmint is unoaked and full of citrus, flint, lime zest, green apple… totally clean flavors. Perfect paired with another favorite of mine, Fleur Verte, an herb- coated fresh goat cheese available right next door! The flavors will put you in a spring-like state of mind.
