This lightly smoked cheese from the Basque and Navarra regions of northern Spain, Idiazabal is a smoked cheese made from the raw milk of Latxa sheep. The sheep’s milk is rich, resulting in a smooth and buttery mouthfeel, and a sweet and aromatic flavor, and with the smoky notes, a slight taste of bacon. With age, Idiazabal gains flavor and complexity, and pairs quite nicely with quince paste and Marcona almonds, and your favorite Spanish red wine (everyone has one!) It’s also delicious with a Spanish-style dry cider, such as Sidre de Nava. Its name is protected by a Board of Denomination of Origin (DOC).
