I recently taught a class on sparkling wine. We did this in January, intentionally post-holidays with the point being to encourage people who are typical wine drinkers to think about sparkling wine as an option for any day or week of the year, just as they would any other style of wine. Surdyk’s has an entire aisle dedicated to bubbles and yet, they still seem to be reserved for celebrations. Time for that to change. Start with this elegant California bottle from Gloria Ferrer.
The estate straddles Sonoma and Napa and its focus is on world-class sparkling wines that mimic the great Cuvées, or blends, from Champagne. This Sonoma Brut (meaning dry) is made predominantly of Pinot Noir with a touch of Chardonnay. A gorgeously crisp wine with elegant bubbles that makes me want to head into the Cheese Shop for a wedge of anything
with the words triple creme in the title. The body shows a gentle creaminess on the palate that complements the flavor notes of apple, pear, and biscuit. When it comes to pairing, don’t just stop at cheese! The pairing list is endless… creamy pasta, fried chicken, scallops, crab cakes, fish tacos, chicken pot pie would be amazing, or even a bowl of popcorn.
