This is a luscious triple-créme style cheese from third generation cheesemaker, Robert Rouzaire. Produced in the Seine-et-Marne region of northern France, the cheese was developed after conducting some experiments with aging Brillat-Savarin in their caves. It is made from pasteurized cow’s milk, and earns it’s triple-créme designation when fresh cream is blended with the milk, making the fat content 75% or higher.  It is creamy, buttery, salty, and as you might imagine, wildly decadent. The palate-cleansing bubbles of your Brut Champagne will be the perfect counterpoint to cut through the richness. Spread on a fresh baguette, perhaps alongside some strawberries, this is classic and amazing wine & cheese pairing that will help you end the year in a delicious way.
