Produced in the small village of Epoisses in Cote-d'Or is everything that's good about stinky cheese. Called the "king of all cheeses" by the original gourmand, Brillat-Savarin himself, its distinctive pumpkin-colored rind is like a beacon for lovers of French cheese. The distinctive color comes from repeated washings with Marc de Bourgogne, the region's traditional pomace brandy, which imparts a slight, yeasty sweetness to the cheese and plays well with its buttery, meaty richness.
